Ready, set, THANKSGIVING! It’s the final countdown, celebrating Thanksgiving is less than 2 weeks away (I know, we are thinking the same thing, HOW is it already almost time for Thanksgiving!) We swear just yesterday we were celebrating the Fourth of July, right? Sipping, Smiling, and STUFFED!

Yes, Thanksgiving is just one day, but here at Mud Pie, we like to celebrate all week long (and then some). We always enjoy time out and about with our little ones throwing the football, playing tag, or just enjoying the great outdoors. Thanksgiving day, we stay in our PJs and cook all day until family comes over. Then we find our stretchiest pants, throw on a flowy top and stuff our faces with delicious food. After hours of telling stories and laughing until our sides hurt, we gather around the living room and watch movies together.

Instead of having Friendsgiving before Thanksgiving, we have it after! It is the PERFECT way to get rid of the pounds and pounds of leftovers and revamp it into something even more delicious. (This also helps us save money, so we can spend it on Mud Pie goodies instead!)

We love spending time with family here at Mud Pie and during the holiday season, we find ourselves spending a lot of time in the kitchen! Whether it is with your momma, your grandmother, your sister, brother, dad, uncle, cousin or mother-in-law, we have such a good time sharing stories and spending time whipping up our favorite traditional recipes! Any way you slice it…

we’ll take a bite no matter what. Is your mouth drooling yet?! We used one of @thefeedfeeds & Love and Olive Oil’s pecan pie recipes and my oh my it was one of the most delicious pies we have ever had. Don’t forget our Pie Plate & Server Set for a perfect presentation of your mouthwatering pie.  We may or may not still be day dreaming about it…

Ingredients

For Crust:

1 3/4 cups (7.75 ounces) White Lily® All-Purpose Flour

1 teaspoon granulated sugar

1/2 teaspoon kosher salt

6 tablespoons (3/4 stick) cold unsalted butter, cut into cubes

4 tablespoons cold unflavored vegetable shortening, cut into cubes

4-6 tablespoons ice water

1 egg, lightly beaten with 1 teaspoon water

For Filling:

1/2 cup pecan halves

1/2 cup chopped pecan pieces

8 ounces dark chocolate, chopped

1/2 cup (1 stick) unsalted butter, cut into cubes

3/4 cup granulated sugar

3/4 cup packed light brown sugar

3/4 teaspoon kosher salt

4 large eggs, at room temperature

1 teaspoon vanilla extract

Directions:

  1. To prepare crust, whisk together flour, sugar, and salt in a bowl. Add butter and shortening and mix with a pastry blender until butter is pretty evenly broken up into pea sized chunks. You can also use your hands to flatten out and break up and larger pieces of butter, as long as your hands are not too warm and will melt the butter.
  2. Drizzle 1 tablespoon of ice water on one fourth of the dough mixture; blend with a fork until that section is evenly moistened. Sprinkle another tablespoon on the next section, and so forth. Mixing the dough a section at at time will help the dough get evenly moistened without getting overmixed. Only use as much water as you need to bring the dough together in a shaggy dough. You may need more or less depending on your specific conditions, but I found about 5 tablespoons was just the right amount.
  3. Gather the dough together in a ball, pressing out any large cracks. Wrap tightly in plastic wrap and refrigerate for at least 30 minutes or more to allow the flour to fully absorb the water molecules.
  4. Roll out dough on a lightly floured surface or pastry cloth. For a 9-inch pie pan, you want a round approximately 12 inches in diameter. Drape the dough over your rolling pin and gently transfer it to your pie tin, easing it into the bottom without stretching.
  5. Trim edges. If you will be crimping your dough, trim the edges about 1/2-inch out and then fold the edge under, then crimp as desired. For a cut out effect, trim the dough to the edge of the pie pan. Reroll the scraps and cut out shapes using a small cookie cutter. Brush the edge of the crust with an egg wash and then adhere the cut out shapes to it. When finished, brush the edges of the crust that will be exposed with an egg wash and sprinkle with granulated sugar. Refrigerate pie crust for at least 15 minutes while you prepare the filling.
  6. Preheat oven to 325 degrees F. Spread pecans (both chopped and halves) in a single layer on a baking sheet. Bake for 3 to 4 minutes or until lightly toasted and fragrant (watch them carefully as they will burn easily!) Set aside to cool.
  7. Gently melt chocolate and butter together in a double boiler or in the microwave, heating in 30 second intervals at 50% power, stirring after each interval. When chocolate is melted and smooth, remove from heat and whisk in sugars and salt until mixture forms a smooth paste. Whisk in eggs, one at a time, until smooth. Whisk in vanilla.
  8. Spread chopped pecans in a layer in the bottom of chilled pie crust. Pour filling over top. Arrange pecan halves on top of filling in a decorative pattern as desired.
  9. Place pie on a baking sheet (just in case) and bake at 325 degrees F for 55 to 65 minutes or until crust is golden and pie is puffed and slightly cracked around the edges, and the center is still just barely jiggly (which will result in a slightly gooey center). If you prefer a firmer pie (more like a fudgy brownie) you can bake the pie slightly longer.
  10. Transfer to a wire rack and let cool completely to room temperature, about 2 hours, before slicing and serving. After 2 hours if you are not serving it immediately, lightly cover with plastic wrap and refrigerate until ready to serve. Let come to room temperature prior to serving.

First Birthday Bash!

We had so much fun filming videos for a little something we have up our sleeve! We played with these two precious cuties and it was super sweet in more ways than one. Here is a sneak peak of our first birthday celebration dressed head to toe in Mud Pie!

What we learned:

1. Talk about a sugar rush! These two were all over the place after they ate their weight in cake. Make your little one’s birthday picture perfect and shop all of our birthday products on mudpie.com now! (and our Gold Edge Marble Serving Board Set)

2. It is going to get messy, that is OK! Baby + cake = a complete mess. But that is how it is supposed to be. Create a cake smashing space inside the house with a disposable table cover (you can get one at the dollar store) underneath the high chair. You can also move the event outside.

3. Make sure you have a bib AND a back up bib, because it’s going to get everywhere.

4. Don’t put the cake down until you are ready to roll. We learned the second we set the cake down, these two went after it. Make sure you are ready to snap a pic or record a video and then set the cake down and let them get to smashing!

5. A first birthday party is all about the birthday boy/girl, but make sure the guests have something sweet to eat too! Get an extra cake (we ordered two of the exact same cake) for your guests, because the smash cake will have baby hands, nose and even feet all over it.

National Pie Day with Mud Pie!

Happy National Pie Day, gals!

Here at Mud Pie, we give into every excuse to celebrate anything and everything that has to do with pie, because pie fixes everything, right? Did you know that January 23rd is National Pie Day?

We are absolutely drooling over this Oreo Home Made Pie we put together. YUM!

Ingredients & Recipe

For the pie crust:

25 Oreo Cookies

5 tablespoons unsalted melted butter

——

  1. Finely crush your cookies. I like to use a food processor for this step, but you can also place the cookies in a plastic bag and roll the sealed bag with a rolling pin. If you’re using a rolling pin, seal the bag but leave about an inch open for air to escape. You’ll have to put some muscle in it to get a fine crush. The crust sticks together best when the cookies are crushed finely.

NOTE: You do NOT need to remove the filling from the Oreo.

2. Stir the cookie crumbs and melted butter together with a fork. Press crumbs into the bottom and up the sides of our Circa Pie Plate. Chill until ready to fill.

3. For a no-bake pie: chill the crust about 30 minutes before filling, then fill/chill as directed in the recipe.

Recipe from: Crazy for Crust 

For the filling:

1 cup heavy whipping cream

1 block (8 oz) cream cheese, softened

1/3 cup granulated sugar

1/2 teaspoon vanilla extract

1 1/2 cups crushed Oreo cookies

Additional Oreos and whipped cream for garnish (optional)

1. In medium mixing bowl, beat cream cheese until fluffy {to avoid lumps make sure cream cheese is really soft or place in microwave for 20 seconds}.

2. Add in vanilla extract and granulated sugar. Beat until combined.

3. In separate bowl, beat the heavy whipping cream until stiff peaks form.

4. Using a rubber spatula, pour the whipped cream into the cream cheese mixture and gently mix together. Fold in the crushed Oreo cookies and combine.

5. Dump into the pie crust and smooth the top.

6. Refrigerate for 6 hours before serving.

7. Before serving, garnish with additional whipped cream and Oreos.

One, we LOVE pie (but that doesn’t surprise us) and two, we aren’t professional pie stylists, but we are putting pie bakers on our resume because it was DELISH! It was so easy and fun using our Circa Pie Plate & Server Set. Ok, we may or may not have counted down the days until it was socially acceptable to drink a Pumpkin Spice Latte. Now that it is officially October, we are sippin’ our PSLs and enjoying the taste of Fall in a cup.

Make your own Pumpkin Spice Latte

Grabbing coffee while you are out can get expensive (plus, that money can get you more fun Fall items on mudpie.com instead!) We want to share our FAV PSL recipe with you that will cut the calories and the cost! We found the recipe Amy’s Healthy Baking put together this season and our mouths are watering simply getting ready to type it out for you.

Ingredients:

1 cup nonfat milk

1 tbsp pumpkin puree

4 drops vanila creme stevia, or adjustesd to taste

1/8 tsp ground cinnamon

tiny pinch ground nutmeg

tiny pinch ground ginger

3/4 cup extra strong coffee (or two shots of espresso, because it’s just one of those days)

Directions:

  1. Add the milk and pumpkin to a small pot. Heat over medium-low heat, stirring constantly with a whisk, until the mixture begins to simmer. Add in the stevia, cinnamon, nutmeg, and ginger. Whisk the mixture until it becomes frothy.

2. Add the coffee to a large mug, and pour the milk mixture on top

Naturally we were #FallingForMP when we realized Mud Pie had the PERFECT mug to hold our delicious drink. There is just something about Fall that puts us in a good mood. We aren’t sure if it’s the PSL, the leaves changing or being able to wear the coziest sweater ever (pssst: the Tobi Turtleneck Poncho comes in THREE different colors!) but we are #FallingForMP and falling in love with Fall.
